Well, i go through my obsessions with spice, so must probably changes a lot, but these are my real mainstays that i seem to come back to.
I've always loved old bay, i haven't found a savory dish that isn't made better by old bay.
pepper, fresh ground red/black/white mix, not only is it fun to grind it, but it is very flavorful and aromatic, don't cry.
garlic powder, or adobo. i love garlic. LOVE it. Adobo is a Spanish seasoning with a bunch of various spices, you have to look and make sure you get the brand with out the MSG. Badia has MSG so i normally go with Goya. Goya has several varieties of adobo, but i've only tried the plain one.
McCormick seasonings with the green cap. the green cap has no salt added in. there are several varieties i love including the Italian mix and garlic herb mix, and spicy seasoning. the spicy seasoning, isn't' really that spicy hot, and tastes marvelous on pasta.
Powdered green chili, this is an unusual one for me. I got it in phoenix, and we are almost done with it, so i don't know where i will get more. I don't normally like chili flavored things, but this isn't hot, it's just flavorful. it's hard to describe what it adds to the dish, but it really accentuates soups quite well.
